A delicious grilled chicken is an all-time favor summer favorite. It can be grilled and lightly seasoned with sauce or skillfully marinated gourmet-style. This summer, enjoy great grilling with a chicken recipe. Here is one that you should seriously consider for your summer grilling get-together with family and friends. It is called the Grilled Hawaiian Chicken. Ingredients include ¾ cup finely chopped pineapple, 4 skinned chicken breasts, 2 tbsp. red chopped pepper,  2 tbsp. cilantro leaves minced, 1 jalapeno pepper chopped and seeded, 1 tsp. unsweetened orange juice, 1 ½ tsp. white wine sugar, ½ tsp. pepper. For the marinade, you need ¼ cup unsweetened orange juice; 1 tsp. cilantro leaves minced, ¼ tsp. salt and 2 tbsp. unsweetened pineapple juice.

Mix marinade ingredients in a shallow dish well. Add chicken and coat. Cover and put on the fridge for a few hours, turning occasionally. Combine bell pepper, pineapple, jalapeno, vinegar, cilantro and orange juice in a mall bowl and allow mixture to stand for 2 hours at room temperature. Remove chicken from dish and reserve the marinade. Sprinkle chicken with pepper then grill 4 to 5 inches from the hot coals for fifteen minutes or until done. Turn and baste often with the reserved marinade. Top each breast with 3 tbsp. pineapple mixture when serving and garnish with pineapple leaves if desired.
