Have a successful summer grilling experience with some great recipes! From barbecuing chicken, grilling the perfect steak to brining pork chops, you can be a pro and enjoy delicious food this summer.

With summer fast coming up, you can begin to take out your grilling gear or clean up that barbecue pit in your backyard and look forward to wonderful summer evening barbecues with family and friends. More summer grilling recipes are found below to help you make a delicious food for your backyard parties and get-togethers.

One recipe is for grilling chicken breasts where you would need 4 to 6 oz. boneless and skinless chicken breasts, 4 tbsp. skim mozzarella cheese, 4 tbsp. skim ricotta cheese and 4 tbsp. of Basil Pesto. Cut a slit into the middle of the chicken breasts sideways to make a ‘pocket’ and mix together the other ingredients and stuff ¼ of the mixture to each breast. Grill for around fifteen minutes and serve when ready.

Another great grilling recipe is the Honey Garlic Grilled Eggplant. You will need 1 eggplant or two if  you use a small one, 1 tbsp. honey, 2 tbsp. olive oil, 2 tbsp. balsamic vinegar, 2 garlic cloves mashed, salt and pepper. Peel off the skin of the eggplant to make a zebra-like pattern. Slice into ½-inch thick circles and lay out in a large paper towel to get rid of the bitterness and make the eggplant less watery and more succulent after cooking. Sit for around fifteen minutes then dry both sides with a paper towel. Mix the other ingredients in a big bowl, add pepper, and salt to taste. Dunk both sides of the eggplant to this marinade and preheat the grill to high. Place the eggplant slices to the grill, cover and turn the heat to medium. Grill for about three minutes and turn 90 degrees to make a cross-hatch grill mark. Grill for about three minutes more. Brush the eggplant slices with the rest of the marinade, flip and repeat grilling on the other side. When cooked, transfer to a plate and drizzle with olive oil.
