Ingredients you will need include 1 tbsp olive oil, 2 ½-pound sweet potatoes peeled if desired, ¼ tsp black pepper coarsely ground, parsley and ¼ tsp salt.

Prepare your outdoor grill for direct, covered grilling on medium heat. Place collapsible steamer basket and in inch of water in a five or six saucepot, cover it then heat water to boiling on high. Cut the sweet potatoes into ½ inc-thick diagonal slices and place them in a steamer basket. Reduce to low heat, cover the saucepot and simmer for about 12 to 15 minutes. Transfer potatoes to a jellyroll pan, brush with olive oil, sprinkle with pepper and salt to season; place the slices on the hot grill grate. Cover and cook for 10 to 12 minutes or when charred and tender. Transfer to a serving bowl and garnish with parsley.
