There is just something about outdoor grilling and being out there despite lots of smoke. With grilling, you use few utensils so there is less mess and few clean-ups for you to do. You can enjoy your food more and your surroundings as well. The best of all when it comes to outdoor grilling is the flavor. This is probably because flavors are enhanced when using a different method of cooking outdoors than indoor cooking. One of the best outdoor grilling recipes you should try is the Spicy Grilled Shrimp. Ingredients you need include ¼-cup orange marmalade, ¼-cup honey, 1-1/2 lb. fresh or frozen extra-large shrimp, deveined or peeled, 1 tbsp olive oil, 2 to 3 tsp. Cajun seasoning and 2 cups hot cooked rice.

When cooking, thaw shrimp when frozen and soak in water for an hour if using wooden skewers. Rinse shrimp and pat dry. For the sauce, combine honey, marmalade, and ½ teaspoon of Cajun seasoning in a small saucepan and set aside. Place shrimp in a self-sealing plastic bag in a bowl. Marinade in a small bowl and combine the remaining Cajun seasoning and oil. Pour the marinade over the shrimp then seal bag. Put in the fridge for an hour, turning the bag occasionally. Drain the shrimp, thread into skewers and grill for 7 to 9 minutes, turning once halfway when grilling. Stir the marmalade sauce over low heat for 3 minutes or until melted, serve shrimp on skewers with sauce and serve with hot cooked rice.
