Grilling is a method of cooking over a hot grate or screen. It has become a very popular method of cooking around the world. One great grilling recipe you can do this summer is the Chicken Tortilla Grill. You will need 8 cups tortilla chips, 1 and ½ cups of cooked chicken cubed, ¾ cup barbecue sauce, 3 chopped and seeded tomatoes and 3 cups Cojack cheese, shredded. Heat the grill and tear two 30 X 18 rectangles of foil and spray with a non-stick cooking spray. Spread the chips at the center of the foil. Mix the barbecue sauce and chicken on a small bowl and spoon over the tortilla. Sprinkle with Cojack cheese and tomatoes and seal the packages by folding twice. Place on the grill and let cook for eight to ten minutes over medium heat until hot and the cheese is melted.
