Have fun in the sun with some of the best summer grilling recipes. Get fired up with simply irresistible grilling recipes from pork, chicken, fish to vegetables. Here are two summer grilling recipes you can try this summer.

The first recipe is the Apricot Glazed Pork Kabobs. Ingredients you need include 1 10 oz.  Apricot preserves, 1 pound boneless pork loin cut to 1 inch, 1 tbsp. orange juice and 1 tbsp. butter. In a small sauce pan, stir together orange juice, butter and apricot preserve until butter is melted.  Place the pork cubes in a heavy plastic bag and pour ¾ apricots to coat. Marinate for at least thirty minutes. Afterwards, thread pork to four to six skewers. Grill over coal for ten to twelve minutes, turning occasionally. Baste frequently with marinade then warm remaining apricot sauce to boiling then serve together with the kabobs if you like.

The second recipe is the Anchovy-Grilled Salmon Steaks. You will need ingredients such as parsley sprigs, 4 salmon steaks, lemon wedges, 6 anchovy fillets, anchovy butter, 2 tbsp. milk, 1 drop Tabasco sauce, 6 tbsp. butter and pepper. Pre-heat grill to high heat, oil the rack and place each steak to ensure even heat. Place a small Anchovy Butter knob on every steak and grill for four minutes. Turn steaks with a fish slice and place a quarter of the butter among the steaks. Grill on the other side for four minutes. Reduce heat and let cook for three minutes more ad less if steaks are thin. Serve with a pat of anchovy butter on top of every steak, garnish with lemon wedges and parsley sprigs. For the anchovy butter, soak all anchovy fillets in milk, mash using a wooden spoon until it turns creamy and chill.
